Brussels Sprouts Pasta

Ingredients

The pasta

  • 300 g spaghetti

The sauce

  • 1 ½ cup Brussels sprouts
  • 1 unit onion
  • 3 tablespoons white wine
  • ¼ cup light cream
  • ½ cup parmesan
  • a handful unit pine nuts
  • a handful unit fresh parsley
  • to taste unit salt
  • to taste unit pepper

Instructions

  1. Boil two pots of water.
  2. Prepare the Brussels sprouts by removing damaged leaves and the stem, and making a cross on the core.
  3. Cook the Brussels sprouts in salted boiling water for about 15 minutes.
  4. Cook the spaghetti in the second pot of boiling water.
  5. In a sauté pan, melt finely chopped onion with olive oil on low heat.
  6. Add white wine, cream, parmesan, and pine nuts to the sauté pan, seasoning lightly with salt and pepper.
  7. Drain the Brussels sprouts, cut them in half, and add to the sauce, warming on low heat.
  8. Drain the spaghetti and mix it into the sauce.
  9. Sprinkle with fresh parsley and serve immediately.
