Brown Butter Brussels Sprouts Pasta

Ingredients

The pasta

  • 8 ounces whole wheat pasta

The sauce

  • 6 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 tablespoon shallot
  • 2 cups chopped Brussels sprouts
  • cup Parmesan cheese
  • to taste salt
  • to taste freshly ground black pepper

The nuts

  • ½ cup hazelnuts

Instructions

  1. 1. Brown the butter in a small saucepan over medium-low heat until golden brown, then set aside.
  2. 2. Boil a large pot of salted water and cook the pasta until al dente, then drain.
  3. 3. Toast the hazelnuts in a small sauté pan over medium heat until browned and fragrant, then chop and set aside.
  4. 4. In a large pan, heat olive oil and sauté garlic and shallot for 2 minutes.
  5. 5. Add the Brussels sprouts and cook until tender, about 5-7 minutes.
  6. 6. Stir in the cooked pasta and hazelnuts, then pour the browned butter over the mixture.
  7. 7. Mix well and heat through, then add Parmesan cheese and season with salt and pepper to taste.
  8. 8. Serve immediately.
