Ingredients

  • 2 links spicy Chicken Italian Sausage
  • 5 oz brussels sprouts, shredded
  • 2 tsp olive oil
  • 6 ½ oz 1 large parsnip, spiralized
  • ¼ cup chopped shallots
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp kosher salt
  • to taste black pepper
  • ½ cup low sodium chicken broth
  • ¼ cup grated parmesan cheese

Instructions

  1. 1. Heat a large nonstick skillet over medium heat and cook the sausage until browned, breaking it up.
  2. 2. Remove the sausage and set aside.
  3. 3. In the same skillet, add olive oil, brussels sprouts, shallots, and garlic, cooking until golden.
  4. 4. Set the vegetable mixture aside with the sausage.
  5. 5. Add the spiralized parsnip noodles to the skillet with chicken broth and red pepper flakes, cooking until al dente.
  6. 6. Return the sausage and brussels sprouts to the skillet, add parmesan cheese, and stir to combine.
