Lemon Garlic Shrimp Pasta

kale (or other greens)

Instructions
- 1. Boil two quarts of water with 1 ½ teaspoons of salt and cook the pasta according to package instructions, saving 1 cup of hot salted pasta water.
- 2. In a large skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant.
- 3. Add red pepper flakes, cracked pepper, and lemon zest, and sauté for another minute.
- 4. Add shrimp, season with salt, and cook until they turn pink and are almost cooked through.
- 5. Stir in kale and cook for an additional minute.
- 6. Drain the pasta, reserving the pasta water, and add the pasta to the skillet, tossing well with the shrimp.
- 7. Mix in Pecorino cheese, a squeeze of lemon juice, and fresh parsley.
- 8. Taste and adjust seasoning with more salt, pasta water, pepper, or lemon juice as needed.
- 9. Serve in bowls, garnished with additional parsley and cheese.
