Lemon Garlic Shrimp Pasta

Ingredients

The pasta

  • 8 ounces pasta (linguini, spaghetti, or other)

The sauce

  • 3 tablespoons olive oil
  • 4–6 cloves garlic
  • ¼–½ teaspoon red pepper flakes
  • ½ teaspoon cracked peppercorns
  • 1 zest lemon
  • 1 pound large shrimp (peeled and deveined)
  • ½ teaspoon salt
  • a couple handfuls kale (or other greens)
  • to taste fresh lemon juice
  • ¼ cup Pecorino cheese (or parmesan)
  • ½ cup fresh Italian parsley

Instructions

  1. 1. Boil two quarts of water with 1 ½ teaspoons of salt and cook the pasta according to package instructions, saving 1 cup of hot salted pasta water.
  2. 2. In a large skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant.
  3. 3. Add red pepper flakes, cracked pepper, and lemon zest, and sauté for another minute.
  4. 4. Add shrimp, season with salt, and cook until they turn pink and are almost cooked through.
  5. 5. Stir in kale and cook for an additional minute.
  6. 6. Drain the pasta, reserving the pasta water, and add the pasta to the skillet, tossing well with the shrimp.
  7. 7. Mix in Pecorino cheese, a squeeze of lemon juice, and fresh parsley.
  8. 8. Taste and adjust seasoning with more salt, pasta water, pepper, or lemon juice as needed.
  9. 9. Serve in bowls, garnished with additional parsley and cheese.
