Shrimp and Spinach Pasta

Ingredients

The pasta

  • 6 oz spaghetti

The sauce

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 8 oz shrimp
  • 2 tablespoons white wine
  • cup pasta water
  • ½ teaspoon salt
  • 2 cups baby spinach
  • ½ tablespoon Italian flat-leaf parsley
  • to taste lemon wedges

Instructions

  1. Bring a pot of water to a boil and cook the spaghetti until al dente, then drain and reserve ⅓ cup of the pasta water.
  2. In a skillet, heat the butter and olive oil, sauté the garlic, then add the shrimp and cook until opaque.
  3. Add the spaghetti, reserved pasta water, white wine, salt, and spinach to the skillet and stir to combine.
  4. Turn off the heat, stir in the parsley, and serve with lemon wedges.
