Creamy Shrimp Pasta

Ingredients

The pasta

  • 6 oz. spaghetti
  • 1 cup pasta water

The sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz. jumbo shrimp, peeled and deveined
  • ¼ cup heavy whipping cream
  • 2 tablespoons white wine (optional)
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • ½ tablespoon lemon juice

The vegetables

  • 2 cups baby spinach
  • ½ tablespoon Italian flat-leaf parsley, chopped
  • to taste lemon wedges

Instructions

  1. 1. Boil water and cook the spaghetti until al dente, then drain and reserve 1 cup of pasta water.
  2. 2. Heat olive oil in a skillet and sauté the minced garlic.
  3. 3. Add the shrimp to the skillet and cook until they turn opaque.
  4. 4. Pour in the reserved pasta water, heavy cream, and optional white wine, then bring to a simmer.
  5. 5. Stir in the butter, salt, cayenne pepper, and lemon juice.
  6. 6. Once the shrimp is cooked through, add the spinach and mix well.
  7. 7. Toss the cooked spaghetti into the skillet and coat with the sauce.
  8. 8. Turn off the heat, garnish with parsley, and serve with lemon wedges.
