Ingredients

Pasta + Shrimp

  • 1 to 2 pounds peeled, deveined shrimp
  • teaspoons smoked paprika
  • to taste salt
  • to taste pepper
  • 12 ounces linguine or spaghetti
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Sauce

  • 2 tablespoons butter
  • 3 to 4 cloves garlic, finely minced
  • cups milk (not skim) or heavy cream
  • 2 teaspoons cornstarch
  • ¼ teaspoon salt
  • a pinch black pepper
  • 1 cup freshly shredded Parmesan cheese
  • to taste chopped, fresh parsley
  • to taste freshly grated Parmesan cheese, for serving

Instructions

  1. Pat the shrimp dry and toss with smoked paprika, salt, and pepper.
  2. Boil salted water and cook the pasta until al dente, reserving 1-2 cups of pasta water before draining.
  3. In a skillet, heat butter and olive oil, then cook half the shrimp until pink and cooked through, then set aside.
  4. Repeat with the remaining shrimp.
  5. In the same skillet, melt butter and sauté garlic until fragrant.
  6. Whisk milk with cornstarch (if using) and add to the skillet, letting it bubble and thicken.
  7. Add salt, pepper, and Parmesan cheese, stirring until melted.
  8. Toss the cooked pasta in the sauce, adding reserved pasta water as needed to loosen.
  9. Add the shrimp back into the skillet and combine.
  10. Serve immediately, garnished with parsley and additional Parmesan if desired.
