Ingredients

The Shrimp

  • 1 pound medium raw shrimp, deveined and peeled
  • to taste salt
  • to taste freshly ground black pepper
  • 1 tablespoon neutral oil (avocado, olive, or refined coconut oil)

The Creamy Garlic Sauce

  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup dry white wine
  • 1 cup heavy cream, at room temperature
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¾ cup grated fresh parmesan, at room temperature
  • to taste finely chopped fresh parsley

Serving Suggestions (Optional)

  • mashed potatoes or mashed cauliflower or mashed palmini
  • prepared pasta of choice or prepared palmini
  • rice or cauliflower rice

Instructions

  1. Season the shrimp with salt and pepper on both sides.
  2. Heat oil in a large skillet over medium-high heat until hot.
  3. Add the shrimp in a single layer and cook for 1-2 minutes until just opaque, then flip and cook for another minute.
  4. Transfer the cooked shrimp to a bowl and set aside.
  5. In the same skillet, reduce heat to medium, melt the butter, and sauté the garlic until fragrant.
  6. Deglaze the pan with white wine and reduce the liquid by half.
  7. Lower the heat and stir in the heavy cream, salt, and pepper, bringing it to a gentle simmer.
  8. Add the parmesan cheese and stir until melted and the sauce thickens slightly.
  9. Return the shrimp to the skillet, spooning the sauce over them.
  10. Serve immediately over optional sides.
