Spicy Shrimp Pasta

Ingredients

The pasta

  • 4 oz spaghetti, spaghetti rigati or linguine

The sauce

  • 1 tablespoon olive oil
  • 2 tablespoons melted butter
  • 4 cloves garlic, minced
  • 6 oz shrimp, deveined and tail-on
  • ½ cup white wine
  • 2 tablespoons pasta water
  • 1 teaspoon chili flakes
  • to taste salt
  • 3 dashes ground black pepper
  • ½ tablespoon lime juice
  • ½ tomato diced
  • ½ tablespoon flat leaf parsley leaves, chopped
  • for garnishing Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside 2 tablespoons of pasta water.
  2. Heat a skillet over medium heat, add olive oil and butter, and sauté minced garlic until aromatic.
  3. Add the shrimp to the skillet and stir until they are halfway cooked.
  4. Pour in white wine, pasta water, chili flakes, salt, and black pepper, and continue cooking until shrimp are almost done.
  5. Stir in lime juice, diced tomato, parsley, and the cooked pasta, mixing well.
  6. Serve immediately, garnished with shaved Parmesan cheese.
