Ingredients

The pasta

  • 8 oz fettuccine

The sauce

  • 2 Tbsp olive oil
  • 1 Tbsp butter
  • 4 cloves garlic
  • ½ lb peeled & deveined shrimp, 41/50 size
  • 1 15 oz can diced tomatoes
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp salt
  • to taste freshly cracked pepper
  • handful fresh parsley

Instructions

  1. 1. Boil water in a large pot and cook the fettuccine for 7-10 minutes until tender, then drain.
  2. 2. In a skillet, heat olive oil and butter over medium heat, and mince the garlic.
  3. 3. Rinse the shrimp under cool water, then add to the skillet with garlic, sautéing until shrimp turns opaque and pink.
  4. 4. Remove shrimp from the skillet and set aside.
  5. 5. Add diced tomatoes, crushed red pepper flakes, salt, and pepper to the skillet, stirring to combine and simmer for about 5 minutes.
  6. 6. Add the drained pasta to the sauce and toss to coat.
  7. 7. Return the cooked shrimp to the skillet and mix well with the pasta.
  8. 8. Garnish with chopped parsley before serving.
