Ingredients

The pasta

  • 8 ounces whole wheat spaghetti or linguine or fettuccini noodles

The sauce and vegetables

  • 1 ½ tablespoons extra-virgin olive oil
  • 1 large head broccoli, cut into florets
  • 1 medium yellow bell pepper, cut into ½-inch pieces
  • 1 medium red bell pepper, cut into ½-inch pieces
  • ½ teaspoon kosher salt
  • 1 shallot minced
  • 2 cloves garlic, minced
  • 1 25-ounce jar spicy arrabbiata pasta sauce

The protein

  • 1 pound raw large shrimp, peeled and deveined

The garnish

  • 3 tablespoons minced fresh parsley
  • 3 tablespoons finely grated Parmesan, optional

Instructions

  1. Bring salted water to a boil and cook the noodles to al dente according to package instructions.
  2. In a large skillet, heat olive oil over medium-high heat and add broccoli and bell peppers with salt. Cook for 2 minutes.
  3. Add shallot and cook until vegetables are crisp-tender, about 3 minutes. Then add garlic and cook until fragrant.
  4. Stir in the pasta sauce and bring to a gentle boil. Reduce heat and add shrimp, simmering until cooked through, about 5 minutes.
  5. Drain the pasta and add it to the sauce, tossing to coat with shrimp and vegetables. Sprinkle with parsley and Parmesan before serving.
