Shrimp and Broccoli

Ingredients

  • pound shrimp, peeled and deveined
  • ½ pound linguine or your favorite pasta or rice
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, finely chopped
  • 2 cups broccoli florets, par-cooked
  • 8 ounces artichoke hearts, sliced
  • 1 ounce white wine (optional)
  • 1 pinch red pepper flakes
  • to taste sea salt and black pepper
  • ½ cup chicken stock (or seafood/vegetable stock)
  • 1 tablespoon butter for beurre manie
  • 1 tablespoon flour for beurre manie

Instructions

  1. Pre-cook the broccoli to your desired tenderness.
  2. Cook the pasta according to the package instructions.
  3. In a large skillet, heat oil over high heat.
  4. Add mushrooms to the pan and sauté for about 5 minutes until fully cooked.
  5. Add shrimp and garlic to the pan and cook until shrimp are almost done.
  6. If using, deglaze the pan with white wine.
  7. Add the precooked broccoli and sliced artichoke hearts to the pan.
  8. Stir in the stock, seasonings, and butter mixed with flour to thicken the sauce.
  9. Serve the shrimp and broccoli over linguine and enjoy.
