Garlic Shrimp and Spinach over Linguine

Ingredients

The pasta and shrimp

  • pound shrimp, peeled and deveined
  • pound linguine or pasta of your choice

The vegetables

  • 2 cloves garlic, finely chopped
  • 2 cups spinach or greens of your choice
  • 8 ounces mushrooms, sliced (optional)

The seasoning and oil

  • 2 tablespoons olive oil
  • to taste sea salt and black pepper
  • a pinch crushed red pepper flakes
  • to taste grated Romano cheese for garnish

Instructions

  1. Cook the pasta according to the instructions on the box.
  2. Heat a large skillet on high heat and add olive oil.
  3. Add chopped garlic and shrimp, then reduce heat to medium and stir to prevent burning.
  4. Remove shrimp and most of the garlic when shrimp are about ¾ cooked, about 2 minutes.
  5. Add mushrooms to the pan and sauté for 2-3 minutes, adding more olive oil if necessary.
  6. Stir in spinach and cook until it begins to wilt.
  7. Return the shrimp and garlic to the pan, season with crushed red pepper, sea salt, and pepper.
  8. Toss the mixture and cook until shrimp are fully cooked.
  9. Drain the cooked pasta and mix it with the shrimp and spinach sauté.
  10. Serve immediately with grated Romano cheese.
