Creamy Parmesan Shrimp Linguine

Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 3 Tbsp butter, divided
  • 3 cloves garlic, minced
  • 3 cups water
  • 1 cup half and half
  • 1 pkg Barilla Pronto Linguine (12 oz)
  • to taste salt and freshly ground black pepper
  • 1 cup finely shredded parmesan
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Melt 1 Tbsp butter in a skillet over medium-high heat, add shrimp, and season with salt and pepper. Cook until opaque and cooked through, then transfer shrimp to foil to keep warm.
  2. Return the skillet to medium heat, melt the remaining butter, and sauté garlic until slightly golden.
  3. Add water, half and half, linguine, and season with salt and pepper. Bring to a boil over medium-high heat.
  4. Boil while stirring frequently until noodles are cooked, about 10 minutes, ensuring some excess liquid remains for the sauce.
  5. Remove from heat, stir in parmesan until melted, and thin with more half and half if needed.
  6. Toss in shrimp and sprinkle with parsley before serving.
