Spicy Garlic Shrimp Over Garlic Spinach

The shrimp and sauce

shrimp peeled, deveined and tails removed

red pepper flakes

the zest and juice of one
lemon

chopped parsley
The spinach
Instructions
- Heat one tablespoon of olive oil in a large non-stick sauté pan and add half of the minced garlic with a pinch of salt.
- Once the garlic is fragrant, add the spinach and toss until shiny and beginning to wilt. Turn off the heat and set aside.
- In a medium non-stick skillet, heat the remaining olive oil and add the rest of the garlic with a pinch of salt and red pepper flakes.
- Once fragrant, add the shrimp and stir until they turn opaque, about three minutes.
- Finish the shrimp with lemon zest, lemon juice, and parsley.
- Plate the wilted spinach and top with the shrimp and sauce.
