Instructions
- Heat 1 teaspoon of oil in a skillet and cook the eggs to form an omelet, then cut into strips.
- Remove the eggs and keep warm. Wipe the pan and heat the remaining oil.
- Cook the pork until browned, then set aside with the eggs.
- Add cabbage, ginger, garlic, and mushrooms to the pan and cook until tender.
- Return the pork and eggs to the pan and stir in green onions.
- Whisk together the soy sauce, hoisin sauce, sesame oil, honey, and cornstarch, then add to the pan.
- Bring to a boil and simmer until the sauce thickens.
- Serve with tortillas or pancakes, and extra hoisin sauce and green onions.
