Ingredients

The pork and eggs

  • 1 pound pork tenderloin
  • 1 tablespoon vegetable oil
  • 2 eggs lightly beaten

The vegetables

  • 1 cup shiitake mushrooms
  • 3 cups shredded cabbage
  • 2 teaspoons minced ginger
  • 1 teaspoon minced garlic
  • ΒΌ cup green onions

The sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 2 teaspoons cornstarch
  • salt and pepper to taste

For serving

  • flour tortillas or mandarin pancakes
  • sliced green onions
  • hoisin sauce

Instructions

  1. Heat 1 teaspoon of oil in a skillet and cook the eggs to form an omelet, then cut into strips.
  2. Remove the eggs and keep warm. Wipe the pan and heat the remaining oil.
  3. Cook the pork until browned, then set aside with the eggs.
  4. Add cabbage, ginger, garlic, and mushrooms to the pan and cook until tender.
  5. Return the pork and eggs to the pan and stir in green onions.
  6. Whisk together the soy sauce, hoisin sauce, sesame oil, honey, and cornstarch, then add to the pan.
  7. Bring to a boil and simmer until the sauce thickens.
  8. Serve with tortillas or pancakes, and extra hoisin sauce and green onions.
