Ingredients

The stir fry

  • pounds pork tenderloin
  • 2 units eggs
  • to taste units salt
  • to taste units pepper
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 2 teaspoons vegetable oil
  • ½ cup onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • ¾ cup pineapple chunks

The sauce

  • ½ cup granulated sugar
  • cup apple cider vinegar
  • 2 tablespoons soy sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • cup ketchup
  • 1 tablespoon cornstarch

Instructions

  1. Cut the pork tenderloin into bite-sized pieces.
  2. Coat each piece in beaten eggs, then dredge in a mixture of flour and cornstarch.
  3. Heat oil in a deep pot to 350°F and fry the pork until golden brown, about 5 minutes per batch.
  4. In a large pan, heat oil and sauté the bell peppers and onion until tender.
  5. Add pineapple chunks to the pan with the vegetables.
  6. In a bowl, mix together the sauce ingredients and pour into the pan with the vegetables.
  7. Bring the sauce to a simmer and cook until thickened.
  8. Add the fried pork to the pan and toss to coat with the sauce.
  9. Serve immediately over steamed rice.
