Instructions
- Cut the pork tenderloin into bite-sized pieces.
- Coat each piece in beaten eggs, then dredge in a mixture of flour and cornstarch.
- Heat oil in a deep pot to 350°F and fry the pork until golden brown, about 5 minutes per batch.
- In a large pan, heat oil and sauté the bell peppers and onion until tender.
- Add pineapple chunks to the pan with the vegetables.
- In a bowl, mix together the sauce ingredients and pour into the pan with the vegetables.
- Bring the sauce to a simmer and cook until thickened.
- Add the fried pork to the pan and toss to coat with the sauce.
- Serve immediately over steamed rice.
