Instructions
- Whisk together the brown sugar, rice vinegar, ketchup, water, soy sauce, and cornstarch until dissolved and set aside.
- Season the pork chops with salt and pepper on both sides.
- Preheat a skillet over medium heat, add cooking oil, and cook the pork chops for about 5 minutes on each side until browned.
- Remove the pork chops and keep them warm on a plate.
- Add the frozen stir fry vegetables to the skillet and cook for about 2 minutes to thaw.
- Stir the sauce and add it to the skillet, cooking until it simmers and thickens.
- Return the pork chops to the skillet and simmer for an additional 2-3 minutes until they reach an internal temperature of 145ºF.
- Serve hot over rice or noodles.
