Sweet and Sour Pork Chops

Ingredients

The sauce

  • ½ cup brown sugar
  • ½ cup rice vinegar
  • ¼ cup ketchup
  • ¼ cup water
  • 2 tsp soy sauce
  • 2 tsp cornstarch

The pork chops

  • 4 pieces boneless, center cut pork chops, 1-inch thick (about 1.5 lbs. total)
  • 1 pinch salt and pepper
  • 2 Tbsp cooking oil

The vegetables

  • 12 oz frozen stir fry vegetables

Instructions

  1. Whisk together the brown sugar, rice vinegar, ketchup, water, soy sauce, and cornstarch until dissolved and set aside.
  2. Season the pork chops with salt and pepper on both sides.
  3. Preheat a skillet over medium heat, add cooking oil, and cook the pork chops for about 5 minutes on each side until browned.
  4. Remove the pork chops and keep them warm on a plate.
  5. Add the frozen stir fry vegetables to the skillet and cook for about 2 minutes to thaw.
  6. Stir the sauce and add it to the skillet, cooking until it simmers and thickens.
  7. Return the pork chops to the skillet and simmer for an additional 2-3 minutes until they reach an internal temperature of 145ºF.
  8. Serve hot over rice or noodles.
