Instant Pot Sweet and Sour Pork

Instructions
- Combine cornstarch and ¼ cup of water in a small bowl and set aside.
- Add oil to the Instant Pot and heat using the sauté function.
- Brown the pork, onion, and garlic in the heated oil for 2-3 minutes.
- Cancel the sauté function and add pineapple chunks and juice, bell pepper, ¾ cup of water, tomato paste, tamari or soy sauce, white wine vinegar, and honey. Stir to combine.
- Lock the lid and cook on high pressure for 6 minutes.
- Allow pressure to release naturally for 5 minutes, then use quick release for any remaining pressure.
- Stir in the cornstarch slurry and simmer uncovered for 3-4 minutes until the sauce thickens.
- Serve hot over rice.
