Ingredients

The main ingredients

  • 1 pound boneless pork loin or pork shoulder, cut into 1-inch chunks
  • 1 onion chopped
  • 1 clove garlic, minced
  • 1 8-ounce can pineapple chunks, with the juice
  • 1 red bell pepper cored and sliced into 1-inch pieces

The sauce

  • 2 tablespoons cornstarch
  • ¼ cup water
  • ¾ cup water
  • 2 tablespoons tomato paste
  • 2 tablespoons tamari or soy sauce
  • ¼ cup white wine vinegar
  • 2 tablespoons honey

For cooking

  • 1 tablespoon cooking oil (olive oil or avocado oil recommended)

For serving

  • 2 cups steamed rice (optional)

Instructions

  1. Combine cornstarch and ¼ cup of water in a small bowl and set aside.
  2. Add oil to the Instant Pot and heat using the sauté function.
  3. Brown the pork, onion, and garlic in the heated oil for 2-3 minutes.
  4. Cancel the sauté function and add pineapple chunks and juice, bell pepper, ¾ cup of water, tomato paste, tamari or soy sauce, white wine vinegar, and honey. Stir to combine.
  5. Lock the lid and cook on high pressure for 6 minutes.
  6. Allow pressure to release naturally for 5 minutes, then use quick release for any remaining pressure.
  7. Stir in the cornstarch slurry and simmer uncovered for 3-4 minutes until the sauce thickens.
  8. Serve hot over rice.
