Instant Pot Spicy Pineapple Pork

Instructions
- Trim and discard the extra fat from the pork roast and cut it into 2-inch cubes.
- Measure out the salt or Magic Mushroom Powder and coat the pork pieces.
- Turn on the Sauté function on the Instant Pot and add the cooking fat once hot.
- Add the seasoned pork cubes and cook until they get some sear.
- Drain the pineapple juice and set the pineapple chunks aside.
- Turn off the Sauté function and add the diced serrano peppers, basil, cumin, and black pepper to the pork.
- Stir to distribute the seasoning.
- Pour in ½ cup of pineapple juice and lime juice, ensuring the liquid reaches the bottom.
- Lock the lid and set the Instant Pot to cook under high pressure for 35 minutes.
- Let the pressure drop naturally or manually release after 20 minutes if needed.
- Check the pork for tenderness and cook longer if necessary.
- Stir in the pineapple chunks until warmed through and adjust seasoning as needed.
- Serve garnished with scallions, ideally over cauliflower rice.
