Instant Pot Magic Pork

boneless pork shoulder, cut into 1½-inch cubes

Magic Mushroom Powder or Diamond Crystal kosher salt

ghee or cooking fat of choice

yellow onion, thinly sliced

Instructions
- Cut the pork shoulder into cubes and toss with Magic Mushroom Powder.
- Turn on the sauté function of the Instant Pot and heat the ghee.
- Add sliced onions and stir fry until soft, then add smashed garlic and cook until fragrant.
- Pour in the orange juice and scrape any browned bits from the bottom.
- Add the seasoned pork and mix well, optionally adding dried mushrooms or fish sauce.
- Lock the lid and set the Instant Pot to cook under high pressure for 35 minutes.
- After cooking, allow the pressure to release naturally and check that the pork is tender.
- Shred the pork with forks and serve.
