Ingredients

The pork

  • 4 lbs pork shoulder, cut into 2 inch cubes

The cooking oil

  • 3 tbsp avocado oil (or other cooking oil)

The broth

  • 1 cup beef broth

The lime

  • 1 unit lime, juice of

The seasoning mix

  • 1 tbsp salt
  • 1 tbsp cumin
  • 1 tbsp allspice
  • 1 tbsp coconut sugar (omit for Whole30 or Keto)
  • 2 tsp dried sage
  • 2 tsp dried thyme
  • 1 tsp nutmeg
  • ½ tsp cayenne pepper (optional)

Instructions

  1. Cut the pork into 2 inch cubes and place them in the Instant Pot.
  2. Drizzle with avocado oil and toss to coat.
  3. Combine all seasoning mix ingredients in a small bowl and mix well.
  4. Sprinkle the seasoning mix over the pork and mix to coat evenly.
  5. Press the sauté button on the Instant Pot and brown the pork for 1-2 minutes on all sides.
  6. Once browned, press cancel on the Instant Pot.
  7. Pour in the beef broth and squeeze lime juice over the pork.
  8. Secure the lid and set the pressure cooker to cook for 45 minutes at high pressure.
  9. Let the pressure naturally release for 20 minutes, then manually release any remaining pressure.
  10. Shred the pork with two forks and serve with juices from the pot.
