Marinated Instant Pot Mojo Pulled Pork

Ingredients

The pork

  • 3 lbs pork shoulder or butt, cut into 2 inch cubes

The marinade

  • 1 medium onion, diced
  • 6 cloves garlic, peeled and smashed
  • ¾ cup fresh squeezed orange juice, about 2 oranges
  • ¼ cup fresh squeezed lemon juice, about 2 lemons
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 tsp salt
  • 1 tsp ground pepper
  • 2 tbsp ghee (or other cooking oil)

For serving

  • to taste romaine lettuce (or sub Siete Tortillas or other sturdy lettuce)
  • to taste cilantro
  • to taste avocado
  • to taste jalapenos, sliced
  • to taste lemon/lime wedges
  • to taste diced red onion

Instructions

  1. Cut the pork into cubes and set aside.
  2. Prep the onion and garlic.
  3. Combine orange juice, lemon juice, cumin, oregano, salt, and pepper in a bowl and mix well.
  4. Press the sauté button on the Instant Pot and add ghee. Once hot, brown the pork on all sides.
  5. Cancel the sauté function once the pork is browned.
  6. Pour the juice mixture over the pork and add the diced onion and garlic.
  7. Secure the lid and close the pressure valve. Cook on high pressure for 30 minutes.
  8. Let the pressure naturally release for 20 minutes, then manually release any remaining pressure and remove the lid.
  9. Shred the pork with two forks.
  10. Serve in lettuce wedges or tortillas with your favorite toppings.
