Instant Pot BBQ Pulled Pork

Instructions
- Combine 1 cup of BBQ sauce, liquid smoke, apple cider vinegar, and brown sweetener in a bowl and set aside.
- Season the pork with salt and pepper.
- Sear the pork in the Instant Pot with olive oil on both sides, then remove and set aside.
- Add half of the chicken broth to deglaze the pot, scraping up brown bits.
- Add onions and garlic, cooking until fragrant.
- Add the remaining chicken broth and the seared pork back into the pot.
- Drizzle the BBQ sauce mixture over the pork.
- Seal the Instant Pot lid and cook on high pressure for 45 minutes.
- Allow steam to release naturally for 10 minutes, then open the pot.
- Remove the pork and shred it, then drizzle with the remaining BBQ sauce before serving.
