Ingredients

The pork

  • 3-4 pound boneless pork shoulder or pork butt

The sauce

  • 2 cup BBQ sauce
  • 1 tablespoon liquid smoke
  • 2 tablespoon apple cider vinegar
  • cup brown sweetener

The aromatics

  • 1 cup chopped onion
  • 2 clove garlic

The broth

  • 1 cup chicken broth or beef broth

The seasoning

  • 1 teaspoon olive oil
  • to taste salt and pepper

Instructions

  1. Combine 1 cup of BBQ sauce, liquid smoke, apple cider vinegar, and brown sweetener in a bowl and set aside.
  2. Season the pork with salt and pepper.
  3. Sear the pork in the Instant Pot with olive oil on both sides, then remove and set aside.
  4. Add half of the chicken broth to deglaze the pot, scraping up brown bits.
  5. Add onions and garlic, cooking until fragrant.
  6. Add the remaining chicken broth and the seared pork back into the pot.
  7. Drizzle the BBQ sauce mixture over the pork.
  8. Seal the Instant Pot lid and cook on high pressure for 45 minutes.
  9. Allow steam to release naturally for 10 minutes, then open the pot.
  10. Remove the pork and shred it, then drizzle with the remaining BBQ sauce before serving.
