Ingredients

The dry rub

  • 2 tablespoons smoked paprika
  • 1 tablespoon packed light brown sugar
  • 2 teaspoons garlic powder
  • 1 teaspoon freshly-ground black pepper
  • 1 teaspoon ground mustard
  • 1 teaspoon Kosher salt

The pork

  • 3–4 pounds boneless pork roast, cut into 2-inch cubes
  • 1 tablespoon olive oil

The sauce

  • 2 cups BBQ sauce, divided
  • 1 cup chicken stock or water

Instructions

  1. Mix the dry rub ingredients in a bowl and coat the pork, then refrigerate for at least 30 minutes.
  2. Use the Sauté feature on the Instant Pot to brown the pork on all sides in olive oil.
  3. Once browned, add the pork, chicken stock, and 1 cup of BBQ sauce to the Instant Pot and combine.
  4. Seal the lid and cook on high pressure for 60 minutes, then let the pressure release naturally.
  5. Shred the pork and let the sauce simmer for 10 minutes to reduce.
  6. Combine the shredded pork with the reduced sauce and serve immediately.
