Instant Pot BBQ Pulled Pork

The pork

boneless pork roast, cut into 2-inch cubes

The sauce

BBQ sauce, divided

Instructions
- Mix the dry rub ingredients in a bowl and coat the pork, then refrigerate for at least 30 minutes.
- Use the Sauté feature on the Instant Pot to brown the pork on all sides in olive oil.
- Once browned, add the pork, chicken stock, and 1 cup of BBQ sauce to the Instant Pot and combine.
- Seal the lid and cook on high pressure for 60 minutes, then let the pressure release naturally.
- Shred the pork and let the sauce simmer for 10 minutes to reduce.
- Combine the shredded pork with the reduced sauce and serve immediately.
