Ingredients

The spice rub

  • 2 tablespoons brown sugar
  • 2 teaspoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon mustard powder
  • ¼ teaspoon cayenne pepper

The pulled pork

  • 3 ½ pounds pork shoulder
  • 2 tablespoons vegetable oil
  • ¾ cup chicken broth
  • 2 cups BBQ sauce

Instructions

  1. Mix all spice rub ingredients in a bowl.
  2. Set Instant Pot to Saute mode and add vegetable oil.
  3. Brown the pork pieces for 3-4 minutes per side.
  4. Remove pork and turn off Saute mode.
  5. Coat the pork with the spice rub.
  6. Combine chicken broth and 1 cup of BBQ sauce in the pot.
  7. Return the pork to the pot and seal it.
  8. Cook on manual high pressure for 60 minutes.
  9. Let the pressure release naturally for 15 minutes, then manually release any remaining pressure.
  10. Shred the pork with two forks and mix in the remaining BBQ sauce before serving.
