Instructions
- Mix the spices for the rub and set aside some for later.
- Rub the spice mixture onto the pork chunks generously.
- Place the onion pieces in the pressure cooker pot.
- Add the Dr. Pepper (or other liquid) over the onions.
- Set the pork on top of the onions and sprinkle with brown sugar.
- Lock the lid and set the steam release knob to sealing.
- Cook on high pressure for 65 minutes.
- Let the pressure release naturally for 15 minutes, then quick release any remaining pressure.
- Remove the meat and onions, shred the meat with forks.
- Mix in the reserved spice rub and additional salt/brown sugar to taste.
- Skim off excess fat from the cooking liquid and mix some back into the meat.
- Serve on buns, over rice, or in tortillas.
