Instant Pot Pork Tenderloin

Instructions
- Trim the ends of the pork tenderloin if needed for uniform thickness and season with salt and pepper.
- Set the Instant Pot to Saute and add avocado oil. Once hot, sear the pork for 3 minutes on each side.
- Cancel the Saute setting and pour the pineapple juice into a measuring cup, adding enough water to make a total of one cup of liquid.
- Add the liquid to the pot, cover, and set to manual high pressure for 2 minutes.
- Let the pressure release naturally for 10 minutes, then check the internal temperature of the pork.
- If the pork is below 145 degrees, set the pot to Saute and cook uncovered until it reaches the desired temperature.
- Remove the pork and tent with foil to keep warm.
- To make the sauce, set the pot to Saute, add garlic powder, ginger, tamari sauce, and honey to the liquid, and bring to a simmer.
- Mix arrowroot starch with water in a small bowl, then add to the pot and simmer for 3 to 4 minutes to thicken.
- Serve sauce over the sliced pork with pineapple slices.
