Crock Pot Pork Tenderloin

Ingredients

The pork

  • 2 lbs Pork tenderloin

The seasoning

  • ½ tsp Sea salt
  • ½ tsp Black pepper

The cooking liquid

  • 1 tbsp Olive oil
  • 2 cups Chicken broth, reduced sodium
  • 3 tbsp Coconut aminos
  • 1 tbsp Honey
  • ½ tbsp Apple cider vinegar

The flavorings

  • 2 cloves Garlic (minced)
  • 2 sprigs Fresh rosemary

Instructions

  1. Trim any silver skin from the tenderloins and rub with salt and pepper.
  2. Heat olive oil in a cast-iron skillet and sear the pork tenderloins for 2 minutes on each side until browned.
  3. In a bowl, mix together chicken broth, coconut aminos, honey, apple cider vinegar, and minced garlic.
  4. Place the pork tenderloins in the Crock Pot without overlapping and pour the chicken broth mixture over them. Arrange rosemary sprigs on the sides.
  5. Cook in the Crock Pot on Low for 2 to 3 hours, or until the internal temperature reaches 145°F.
  6. Optionally, slice the tenderloins, return them to the Crock Pot with the sauce, and heat on High for an additional 5-8 minutes.
