Ingredients

The roast

  • 3 pounds pork loin
  • 3 tablespoons olive oil
  • to taste salt
  • to taste black pepper
  • 2 teaspoons Italian seasoning

The gravy

  • cups chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons light brown sugar
  • 1 tablespoon garlic, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons butter, cut into slices
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a pan over medium-high heat.
  2. Season the pork loin with salt, pepper, and Italian seasoning, then sear it for 5-6 minutes per side until golden brown.
  3. Transfer the pork to the slow cooker.
  4. In a bowl, mix the remaining olive oil, chicken broth, soy sauce, balsamic vinegar, brown sugar, and minced garlic.
  5. Pour the mixture over the pork in the slow cooker.
  6. Cover and cook on low for 6-8 hours or high for 4 hours.
  7. Once cooked, remove the pork and keep it warm.
  8. Pour the cooking liquid into a pot and bring it to a simmer.
  9. Mix cornstarch with cold water, add it to the pot, and bring to a boil to thicken the sauce.
  10. Stir in the butter until melted, then slice or shred the pork and drizzle with sauce, garnishing with parsley.
