Instructions
- Heat 2 tablespoons of olive oil in a pan over medium-high heat.
- Season the pork loin with salt, pepper, and Italian seasoning, then sear it for 5-6 minutes per side until golden brown.
- Transfer the pork to the slow cooker.
- In a bowl, mix the remaining olive oil, chicken broth, soy sauce, balsamic vinegar, brown sugar, and minced garlic.
- Pour the mixture over the pork in the slow cooker.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked, remove the pork and keep it warm.
- Pour the cooking liquid into a pot and bring it to a simmer.
- Mix cornstarch with cold water, add it to the pot, and bring to a boil to thicken the sauce.
- Stir in the butter until melted, then slice or shred the pork and drizzle with sauce, garnishing with parsley.
