Crock Pot Apple Cider Pork Roast

Instructions
- Heat olive oil and butter in a skillet over medium heat and sauté the onions until caramelized.
- Season the pork roast with salt and pepper.
- Sear the pork roast on all sides in the skillet.
- Place the seared roast in a slow cooker and top with caramelized onions.
- Whisk together apple cider, honey, and mustard, then pour over the roast.
- Cook on high for 4-6 hours or low for 8-10 hours until the meat is tender.
- Remove the roast and onions from the slow cooker and shred the meat.
- Bring the cider mixture to a boil in a saucepan, then whisk in a cornstarch mixture to thicken.
- Serve the pork on mashed potatoes with the gravy.
