Ingredients

The roast

  • 1 medium onion, sliced vertically
  • 1 tablespoon butter
  • 1 tablespoon extra-virgin olive oil
  • 2½-3 pounds pork sirloin roast
  • teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper

The sauce

  • cups apple cider
  • 3 tablespoons honey
  • 1 tablespoon Creole or mild coarse grain mustard
  • tablespoons organic apple cider vinegar
  • 2 tablespoons cold water
  • 2 tablespoons cornstarch

Optional side

  • to taste mashed potatoes

Instructions

  1. Heat olive oil and butter in a skillet over medium heat and sauté the onions until caramelized.
  2. Season the pork roast with salt and pepper.
  3. Sear the pork roast on all sides in the skillet.
  4. Place the seared roast in a slow cooker and top with caramelized onions.
  5. Whisk together apple cider, honey, and mustard, then pour over the roast.
  6. Cook on high for 4-6 hours or low for 8-10 hours until the meat is tender.
  7. Remove the roast and onions from the slow cooker and shred the meat.
  8. Bring the cider mixture to a boil in a saucepan, then whisk in a cornstarch mixture to thicken.
  9. Serve the pork on mashed potatoes with the gravy.
