Easy Instant Pot Pork Loin Roast

Instructions
- Drizzle the pork loin with olive oil and season with thyme, rosemary, salt, and pepper.
- Optionally marinate the pork loin for 2 hours to overnight.
- Set the Instant Pot to the sauté function and heat the remaining olive oil.
- Sear the pork loin on each side for 1-2 minutes, then remove it from the pot.
- Deglaze the pot with broth, scraping up the brown bits.
- Add balsamic vinegar and brown sweetener to the pot, then return the pork loin.
- Close the pot and cook on high pressure for 12 minutes.
- Allow the steam to release naturally for 10 minutes before removing the pork.
- Let the pork rest for 10 minutes before slicing.
