Easy Instant Pot Pork Loin Roast

Ingredients

The pork

  • 1 3-4 pound pork loin

The seasoning and oil

  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1 teaspoon thyme
  • 3 sprigs fresh rosemary
  • 3 cloves garlic

The liquids

  • 1 cup chicken or beef broth
  • ¼ cup brown sweetener
  • 3 tablespoons balsamic vinegar

Instructions

  1. Drizzle the pork loin with olive oil and season with thyme, rosemary, salt, and pepper.
  2. Optionally marinate the pork loin for 2 hours to overnight.
  3. Set the Instant Pot to the sauté function and heat the remaining olive oil.
  4. Sear the pork loin on each side for 1-2 minutes, then remove it from the pot.
  5. Deglaze the pot with broth, scraping up the brown bits.
  6. Add balsamic vinegar and brown sweetener to the pot, then return the pork loin.
  7. Close the pot and cook on high pressure for 12 minutes.
  8. Allow the steam to release naturally for 10 minutes before removing the pork.
  9. Let the pork rest for 10 minutes before slicing.
