Ingredients

The roast

  • 2 lb Pork Loin Roast (boneless)
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Pepper
  • 1 Tablespoon Olive Oil
  • 1 Onion sliced into thick rounds
  • 1 teaspoon Garlic Powder
  • cup Apple Cider
  • cup Balsamic Vinegar
  • 1 Tart Apple sliced thick (e.g., Granny Smith)

To Finish

  • 3 Tablespoons Corn Starch
  • 3 Tablespoons Cold Water
  • 1 Tablespoon Honey

Instructions

  1. Season the roast with salt and pepper on all sides.
  2. Heat olive oil in the Instant Pot on the Sauté setting and brown the roast and onion for 2-3 minutes per side.
  3. Remove the roast and onions, then add garlic powder, remaining salt, and pepper to the onions.
  4. Pour in apple cider and deglaze the pot, scraping up browned bits.
  5. Add balsamic vinegar and apple slices, then place the roast on top.
  6. Cancel the sauté setting, seal the lid, and set to Pressure Cook for 30 minutes.
  7. After cooking, let the pot sit for 12 minutes for natural release, then release remaining steam.
  8. Check the roast temperature; if below 145°F, seal and cook for an additional 0 minutes.
  9. Remove the roast and cover with foil.
  10. Whisk corn starch and cold water, then add to the pot to thicken the sauce.
  11. Taste the sauce and adjust sweetness with honey if desired.
  12. Slice the roast and serve with sauce.
