Instructions
- Season the roast with salt and pepper on all sides.
- Heat olive oil in the Instant Pot on the Sauté setting and brown the roast and onion for 2-3 minutes per side.
- Remove the roast and onions, then add garlic powder, remaining salt, and pepper to the onions.
- Pour in apple cider and deglaze the pot, scraping up browned bits.
- Add balsamic vinegar and apple slices, then place the roast on top.
- Cancel the sauté setting, seal the lid, and set to Pressure Cook for 30 minutes.
- After cooking, let the pot sit for 12 minutes for natural release, then release remaining steam.
- Check the roast temperature; if below 145°F, seal and cook for an additional 0 minutes.
- Remove the roast and cover with foil.
- Whisk corn starch and cold water, then add to the pot to thicken the sauce.
- Taste the sauce and adjust sweetness with honey if desired.
- Slice the roast and serve with sauce.
