Ingredients

The roast

  • 2 pounds pork roast

The seasoning and sauce

  • 2 tablespoons cooking oil
  • 1 medium onion, diced
  • 1 medium jalapeño, cored and diced
  • 2 cloves garlic, minced
  • 1 20-ounce can crushed pineapple, with juices
  • ½ cup orange juice
  • ¼ cup apple cider vinegar
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cumin

For serving (optional)

  • to taste sliced green onions or finely chopped cilantro

Instructions

  1. 1. Heat oil in the Instant Pot using the sauté function, then cook onion and jalapeño for 2-3 minutes.
  2. 2. Stir in garlic, pineapple, orange juice, vinegar, salt, pepper, and cumin.
  3. 3. Cancel the sauté function and place the pork roast on top of the mixture.
  4. 4. Lock the lid and set the Instant Pot to high pressure for 30 minutes, then allow for natural pressure release.
  5. 5. Shred the pork using two forks and serve hot, garnished with green onions or cilantro if desired.
