Ingredients

The pork roast

  • 2.5 lbs pork tenderloin

The seasoning and liquids

  • 2 tbsp avocado oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • ½ cup beef broth
  • ¼ cup pepperoncini juice
  • 10 pepperoncini peppers
  • 1 packet ranch seasoning

Instructions

  1. 1. Heat the Instant Pot to 'Saute' and add oil.
  2. 2. Prepare the pork by trimming fat and cutting into 3 chunks.
  3. 3. Once the oil is hot, add diced onions and saute for 2 minutes, then add minced garlic.
  4. 4. Add the pork to brown on each side for about 2 minutes.
  5. 5. Turn off 'Saute' mode and add beef broth, pepperoncini juice, pepperoncini peppers, and ranch seasoning.
  6. 6. Seal the lid, ensure the knob is set to sealing, and cook on manual for 25 minutes.
  7. 7. Let the pressure release naturally for 10 minutes, then quick release the remaining pressure.
  8. 8. Let the pork stand for 10 minutes without the lid before shredding with two forks.
