Ingredients

The pork and seasoning

  • 1 small Onion (optional), sliced
  • 3-4 lbs Pork Butt Roast (Pork Shoulder), cut in thirds
  • cup Water
  • 1 packet (1 oz) Ranch Dressing Mix
  • 1 packet (1 oz) Au Jus (or Brown Gravy mix)
  • ½ (12 oz) jar Pepperoncinis (regular, not hot)
  • ½ (12 oz) jar Juice from the Pepperoncinis
  • ½ cup Butter, unsalted

For thickening the gravy

  • 4 Tbsp Flour
  • 4-6 Tbsp Water

Instructions

  1. Add all ingredients to the Instant Pot in the specified order and seal the lid.
  2. Set the pressure cook time to 70 minutes.
  3. After cooking, let the pot sit for 15 minutes for natural release, then release any remaining pressure.
  4. Open the lid and remove the meat, setting it aside to shred or leave in chunks.
  5. Turn on the sauté function and whisk in the flour mixture to thicken the gravy.
  6. Return the meat to the pot and serve over mashed potatoes, rice, or on buns.
