Slow Cooker Pork Tenderloin

Ingredients

The pork

  • 2 pieces pork tenderloins
  • 2 ¼ lbs pork tenderloin

The seasoning and sauce

  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 2 teaspoons Italian seasoning
  • 1 cup chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons minced garlic
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • 2 tablespoons chopped parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a pan over medium-high heat.
  2. Season the pork tenderloins with salt, pepper, and Italian seasoning.
  3. Sear the pork for 5-6 minutes per side until golden brown.
  4. Place the pork in the slow cooker.
  5. In a bowl, mix the remaining olive oil, chicken broth, soy sauce, balsamic vinegar, brown sugar, and garlic.
  6. Pour the sauce over the pork in the slow cooker.
  7. Cover and cook on LOW for 6-8 hours or HIGH for 4 hours.
  8. Remove the pork and keep warm.
  9. Pour the cooking liquid into a pot and bring to a simmer.
  10. Mix cornstarch with cold water, add to the pot, and bring to a boil until thickened.
  11. Stir in the butter until melted, then slice or shred the pork and serve with the sauce and parsley.
