Ingredients

The pork

  • 2 lb pork tenderloins

The seasoning

  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • tsp cayenne pepper
  • 1 tsp freshly ground black pepper
  • Salt to taste

The cooking ingredients

  • 1 Tbsp light olive oil
  • cups low-sodium chicken broth
  • tsp minced fresh garlic
  • 2 tsp cornstarch
  • 1 Tbsp low-sodium chicken broth (for thickening)

Instructions

  1. Preheat the oven to 450°F and place a cast iron pan inside to heat.
  2. In a bowl, mix together all the spices and season with salt.
  3. Rub the spice mixture evenly over the pork tenderloins.
  4. Carefully remove the hot pan from the oven, add the oil, and swirl it around.
  5. Place the pork tenderloins in the hot pan and return it to the oven.
  6. Roast for 10 minutes, then turn the tenderloins and continue roasting until they reach an internal temperature of 145°F, about 8-14 minutes more.
  7. Remove the pan from the oven and let the pork rest for 5-10 minutes under foil.
  8. On the stovetop, sauté the minced garlic in the pan for about 20 seconds.
  9. Add the chicken broth and reduce the sauce by half, about 4-5 minutes.
  10. Whisk in the cornstarch mixture and cook until thickened, about 1 minute.
  11. Slice the pork into ½-inch thick pieces and serve with the pan sauce.
