Ingredients

The pork

  • 1 piece pork tenderloin (2 1/2 lb)

The spice rub

  • 1 tsp salt
  • 1 tsp ground cumin
  • ¾ tsp chili powder
  • ½ tsp cinnamon
  • ½ tsp freshly ground black pepper
  • ¼ tsp paprika

The cooking ingredients

  • 1 Tbsp olive oil
  • 6 Tbsp packed brown sugar
  • 1 Tbsp finely minced garlic
  • tsp Sriracha or Tabasco sauce

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mix the spices in a small bowl and rub the mixture over all sides of the pork tenderloin.
  3. Heat olive oil in a skillet over medium-high heat and brown the pork on both sides for 2-3 minutes each.
  4. In a small bowl, combine brown sugar, minced garlic, and hot sauce, then spread this mixture over the browned pork.
  5. Transfer the pork to the oven and roast until the center reaches 140 degrees, about 20-30 minutes.
  6. Let the pork rest for 10 minutes covered with aluminum foil before carving and serving.
