Ingredients

The pork

  • 2 lbs. pork tenderloin

The dry rub

  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne
  • 2 teaspoons garlic powder
  • ¼ teaspoon ground black pepper
  • 1 teaspoon ground cinnamon
  • teaspoons coarse salt

The marinade

  • 1 tablespoon minced garlic
  • ¾ cup BBQ sauce
  • ¼ cup soy sauce

The carrots

  • 2 lbs. carrots
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • 1 teaspoon pepper
  • ¼ cup soy sauce

Instructions

  1. Dry the pork tenderloin with a paper towel.
  2. Mix the dry rub ingredients and rub them all over the pork.
  3. Whisk the marinade ingredients together and place them in a bag with the pork, ensuring it's submerged; marinate for at least 2 hours or overnight.
  4. Preheat the grill to 450°F – 500°F.
  5. Sear the pork on the grill for 2 minutes on each side over direct heat.
  6. Turn half the burners to low and move the pork to the low heat side; reduce the grill temperature to around 400°F.
  7. Grill the pork for about 12 minutes, flipping halfway through, until it reaches an internal temperature of at least 145°F.
  8. Remove from the grill and let rest for at least 5 minutes before slicing.
