Ingredients

The pork

  • 2 pieces pork tenderloins, trimmed of excess fat or silver skin

The marinade

  • 1 tablespoon olive oil
  • 1-2 tablespoons fresh lime juice
  • ¼ cup light brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon coarse kosher salt
  • 1 pinch coarsely ground black pepper

Instructions

  1. Mix olive oil, lime juice, brown sugar, smoked paprika, onion powder, garlic powder, salt, and pepper in a bowl to form a thick paste.
  2. Rub the mixture over the pork tenderloins and place them in a shallow dish. Refrigerate for up to 24 hours for more flavor, or grill immediately.
  3. Preheat the grill to medium-high heat (about 375°F).
  4. Grill the pork for 10 minutes, then flip and continue cooking until the internal temperature reaches 145°F, about 8-10 more minutes.
  5. Remove the pork from the grill and tent with aluminum foil for 10-15 minutes before slicing and serving.
