Grilled Pork Tenderloin

Ingredients

  • 1 pound pork tenderloin trimmed of fat and silverskin
  • 1 lime zest finely grated
  • ½ cup freshly squeezed lime juice
  • ¼ cup honey
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon garlic powder
  • 1 chipotle chile in adobo sauce
  • 1 teaspoon vegetable oil
  • 1 teaspoon fresh cilantro leaves chopped

Instructions

  1. Combine lime zest, lime juice, honey, salt, and garlic powder in a jar and shake to mix.
  2. Reserve half of the marinade in the refrigerator.
  3. In a plastic bag, combine the remaining marinade with the chipotle pepper and mash to mix.
  4. Add the pork tenderloin to the bag, seal it, and refrigerate for 6 to 24 hours, turning halfway.
  5. Remove the pork from the bag and let it rest at room temperature while preparing the grill.
  6. Prepare the grill for cooking, either charcoal or gas.
  7. Cook the pork on the grill for 12 to 15 minutes, turning every 1 ½ to 2 minutes until it reaches an internal temperature of 140°F.
  8. Wrap the cooked tenderloin in foil with the reserved marinade and let it rest for 10 minutes.
  9. Slice the tenderloin and garnish with cilantro before serving.
