Ingredients

The Pork

  • 1 lb. pork tenderloin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 1 pinch cinnamon

The Pineapple Salsa

  • 1 cup diced fresh pineapple
  • ½ cup diced red bell pepper
  • ½ cup diced red onion
  • ½ - 1 small jalapeño
  • ¼ cup fresh cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic
  • to taste fine salt

Instructions

  1. Combine all salsa ingredients in a bowl, mix well, and refrigerate.
  2. Preheat the grill to medium-high heat (425℉).
  3. Mix the dry rub ingredients in a small bowl.
  4. Pat the pork tenderloin dry and rub the spice mixture all over it. Let it rest for 15 minutes.
  5. Grill the tenderloin over indirect heat for 20-25 minutes, turning halfway, until it reaches 145℉.
  6. Remove from grill, tent with foil, and let it rest for 10 minutes.
  7. Slice the tenderloin and serve with the pineapple salsa.
