The Pineapple Salsa

diced fresh pineapple

Instructions
- Combine all salsa ingredients in a bowl, mix well, and refrigerate.
- Preheat the grill to medium-high heat (425℉).
- Mix the dry rub ingredients in a small bowl.
- Pat the pork tenderloin dry and rub the spice mixture all over it. Let it rest for 15 minutes.
- Grill the tenderloin over indirect heat for 20-25 minutes, turning halfway, until it reaches 145℉.
- Remove from grill, tent with foil, and let it rest for 10 minutes.
- Slice the tenderloin and serve with the pineapple salsa.
