Ingredients

The pork and rub

  • 1 lb pork tenderloin
  • 2 tsp sea salt
  • ½ tsp fresh ground black pepper
  • 1 tsp ground cumin
  • 1 tsp chipotle powder
  • 1 tsp cinnamon

The glaze

  • ½ cup mango ginger chutney
  • ½ tbsp butter
  • 1 tbsp dark rum
  • 1 tbsp lemon juice
  • ½ large lemon (juice)
  • 1 tsp lemon zest
  • ½ tbsp honey

Instructions

  1. Combine the rub ingredients and coat the pork tenderloin with olive oil and the rub mixture.
  2. In a saucepan, combine all glaze ingredients and simmer on low for 10 minutes. Divide the glaze into two bowls.
  3. Preheat the grill to 375°F, creating direct and indirect cooking zones.
  4. Cook the pork on indirect heat for 6 minutes per side, totaling 12 minutes.
  5. Coat the pork with glaze and sear on the direct heat side for 4 minutes on each side until the internal temperature reaches 145°F.
  6. Remove from the grill and tent under foil for 10 minutes before serving with additional glaze.
