Ingredients

The Rub

  • 2 teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle powder
  • 1 teaspoon cinnamon
  • 2 pork tenderloins (2 1/4 to 2 1/2 pounds total)
  • 2 tablespoons olive oil

The Glaze

  • 1 cup packed dark brown sugar
  • 2 tablespoons finely chopped garlic
  • 1 tablespoon chipotle Tabasco

Instructions

  1. Combine the rub ingredients and apply to the pork tenderloin, letting it sit for 5 minutes.
  2. Mix the glaze ingredients and apply to the pork just before grilling.
  3. Set up the grill for indirect and direct cooking, aiming for a temperature of 350 degrees.
  4. Cook the pork on the indirect side until it reaches an internal temperature of 140 degrees, about 20 to 25 minutes.
  5. Grill the pork on direct heat for 3 minutes on each side for char marks.
  6. Tent the pork under foil for 10 minutes before serving.
