Apricot Ginger Glazed Pork Tenderloin

Ingredients

The pork

  • 2 lb pork tenderloins

The spice rub

  • 1 tblsp chipotle powder
  • 1 tblsp garlic powder
  • ½ tblsp turbinado sugar
  • 1 tsp sea salt
  • ½ tsp fresh ground black pepper

The glaze

  • 1 ½ cups apricot preserves
  • ½ cup BBQ sauce
  • 1 tsp grated ginger
  • 2 cloves garlic
  • ½ tsp hot sauce
  • 1 unit lime (juiced)
  • 1 pinch lime zest

Instructions

  1. Combine spice rub ingredients in a jar and shake until uniform.
  2. Rub spice mixture onto pork tenderloins and marinate for 2 to 24 hours.
  3. Melt apricot preserves in a saucepan, remove from heat, and add remaining glaze ingredients, reserving half for later.
  4. Preheat the grill to 400 degrees and grill pork for 4 minutes on each side, applying glaze and grilling for an additional 2 minutes.
  5. Check internal temperature; if it reaches 145 degrees, remove from grill and tent with foil for 5 minutes before serving.
