Peppered Pork Tenderloin with Sweet Chili-Pecan Fruit Sauce

Instructions
- Cut the pork tenderloin in half and season with salt, pepper, and cajun seasoning.
- Toast the pecans in a hot sauté pan and set aside.
- Melt butter in a small saucepan over medium heat.
- Add diced pineapple to the melted butter and cook for 1-2 minutes.
- Stir in cranberries, tangerine segments, zest, and sweet chili sauce, bring to a boil, then remove from heat.
- Mix in the toasted pecans and set the sauce aside.
- Lightly coat the pork with flour.
- Heat olive oil in a large sauté pan over medium heat and add the pork.
- Cook the pork without disturbing for 4-5 minutes, then turn and cook the other side for another 4-5 minutes.
- Continue cooking the pork over medium-low heat or in a preheated oven at 350°F for about 10 minutes until the internal temperature reaches 165°F.
- Let the pork rest for 7-10 minutes before slicing.
- Serve the sliced pork with the sweet chili pecan fruit sauce.
