Peppered Pork Tenderloin with Sweet Chili-Pecan Fruit Sauce

Ingredients

The Pork

  • 2 lbs pork tenderloin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon cajun seasoning
  • 1 tablespoon all-purpose flour
  • 1 tablespoon olive oil

The Sauce

  • 1 tablespoon unsalted butter
  • ½ cup diced pineapple
  • ½ cup cranberries
  • 1 small tangerine
  • 1 teaspoon tangerine zest
  • ½ cup pecans
  • 1 cup sweet chili sauce
  • 1 tablespoon chopped cilantro or parsley

Instructions

  1. Cut the pork tenderloin in half and season with salt, pepper, and cajun seasoning.
  2. Toast the pecans in a hot sauté pan and set aside.
  3. Melt butter in a small saucepan over medium heat.
  4. Add diced pineapple to the melted butter and cook for 1-2 minutes.
  5. Stir in cranberries, tangerine segments, zest, and sweet chili sauce, bring to a boil, then remove from heat.
  6. Mix in the toasted pecans and set the sauce aside.
  7. Lightly coat the pork with flour.
  8. Heat olive oil in a large sauté pan over medium heat and add the pork.
  9. Cook the pork without disturbing for 4-5 minutes, then turn and cook the other side for another 4-5 minutes.
  10. Continue cooking the pork over medium-low heat or in a preheated oven at 350°F for about 10 minutes until the internal temperature reaches 165°F.
  11. Let the pork rest for 7-10 minutes before slicing.
  12. Serve the sliced pork with the sweet chili pecan fruit sauce.
