Roasted Pork Tenderloin with Ginger Peach Sauce

Ingredients

The sauce

  • 1 can Del Monte No Sugar Added Sliced Peaches, drained
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon less sodium soy sauce
  • 1 clove garlic, minced
  • ½ teaspoon Sriracha
  • ¼ cup white wine

The pork

  • 1 lb pork tenderloin, trimmed
  • 2 teaspoons canola oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with aluminum foil.
  2. Blend the peaches, ginger, soy sauce, garlic, and Sriracha until smooth and set aside.
  3. Season the pork tenderloin with salt and pepper, then sear in a skillet with heated oil until golden brown on all sides.
  4. Transfer the tenderloin to the baking sheet and brush with two tablespoons of the peach sauce.
  5. Bake in the oven for 18-20 minutes until the pork is juicy and slightly pink inside.
  6. While the pork cooks, heat the remaining peach sauce with the white wine in a saucepan until boiling, then reduce to a simmer for about 10 minutes.
  7. Serve the pork sliced with the sauce ladled over it.
