Roasted Pork Tenderloin with Ginger Peach Sauce

The pork

pork tenderloin, trimmed

Instructions
- Preheat the oven to 425°F and line a baking sheet with aluminum foil.
- Blend the peaches, ginger, soy sauce, garlic, and Sriracha until smooth and set aside.
- Season the pork tenderloin with salt and pepper, then sear in a skillet with heated oil until golden brown on all sides.
- Transfer the tenderloin to the baking sheet and brush with two tablespoons of the peach sauce.
- Bake in the oven for 18-20 minutes until the pork is juicy and slightly pink inside.
- While the pork cooks, heat the remaining peach sauce with the white wine in a saucepan until boiling, then reduce to a simmer for about 10 minutes.
- Serve the pork sliced with the sauce ladled over it.
