Ingredients

Sauce

  • 1 tablespoon canola oil
  • 1 cup chopped onion
  • 2 cloves garlic
  • ¼ cup packed brown sugar
  • ¼ cup rice wine vinegar
  • ¼ cup ketchup
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons dry mustard
  • 1 teaspoon ground ginger
  • ½ teaspoon black pepper
  • teaspoon crushed red pepper
  • 1 pinch ground cloves
  • pounds black plums

Pork

  • 2 (1 pound) pork tenderloins
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Heat a saucepan and sauté onion and garlic in canola oil for 5 minutes.
  2. Add brown sugar, vinegar, ketchup, soy sauce, mustard, ginger, black pepper, crushed red pepper, cloves, and plums; bring to a boil.
  3. Reduce heat and simmer for 30-40 minutes until sauce thickens.
  4. Taste and adjust seasoning if necessary.
  5. Preheat the oven to 450°F.
  6. Sear the pork tenderloins in a skillet with canola oil for 7 minutes until browned.
  7. Transfer the pork to a foil-lined pan and coat with plum sauce.
  8. Roast for 15 minutes, then flip and coat with more sauce, roasting for an additional 10 minutes until cooked through.
  9. Let the pork stand for 10 minutes before slicing and serving with remaining sauce.
