Ingredients

The pork

  • 2 lb pork tenderloin

The seasoning

  • 2 tablespoon extra virgin olive oil
  • 2 teaspoon cracked black pepper
  • 1 tablespoon coarse sea salt
  • 2 tablespoon chopped garlic
  • 1 tablespoon fresh basil
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh Italian parsley
  • 1 tablespoon fresh sage
  • 4 tablespoon butter

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with aluminum foil.
  3. In a small bowl, mix garlic, basil, oregano, thyme, parsley, and sage.
  4. Season the pork generously with salt and pepper.
  5. Heat olive oil in a large pan until shimmering.
  6. Sear the pork on all sides until dark golden brown.
  7. Transfer the pork to the baking sheet.
  8. Coat the pork with the herb mixture and place pats of butter on top.
  9. Bake the pork until it reaches an internal temperature of 145°F, about 25 minutes.
  10. Let the pork rest tented with foil for 5-10 minutes before slicing.
  11. Slice against the grain and serve.
