Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with aluminum foil.
- In a small bowl, mix garlic, basil, oregano, thyme, parsley, and sage.
- Season the pork generously with salt and pepper.
- Heat olive oil in a large pan until shimmering.
- Sear the pork on all sides until dark golden brown.
- Transfer the pork to the baking sheet.
- Coat the pork with the herb mixture and place pats of butter on top.
- Bake the pork until it reaches an internal temperature of 145°F, about 25 minutes.
- Let the pork rest tented with foil for 5-10 minutes before slicing.
- Slice against the grain and serve.
